Pebre


Pebre is a salsa that typically accompanies bread before any meal in a Chilean restaurant.
It's pretty freaking good.

Yield: Makes about 2/3 cup

Ingredients:
  • 4 jalapeƱo peppers, seeded and minced
  • 1 chopped tomato
  • 1/4 cup fresh lemon juice
  • 1 tablespoon salt
  • 1/4 cup vegetable oil
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons white wine vinegar
Preparation:

Combine first 3 ingredients in a bowl. Cover and let stand 30 minutes; drain. Add the remaining ingredients. *from Coastal Living, November 2003
